Salmon and Avocado Bowl

I recently started to work out again and a new fitness regime creates a bigger appetite.  After hardcore ab workouts, I find myself craving something fresh and easy, like this salmon and avocado bowl.

Initially, I stumbled upon a poke recipe from A Cozy Kitchen which used sushi-grade tuna.  I don’t have a trusted source to buy raw fish in my neighborhood, so I substituted the tuna for smoked salmon instead.   The recipe was loosely based off the Hawaiian poke dish, an appetizer consisting of raw fresh tuna chopped up and marinated in a soy sauce, sesame oil, seaweed, and chilli pepper combination.

Ingredients: smoked salmon (or tuna), soy sauce, sesame oil, ponzu sauce, seaweed and sesame seed mix, avocado, rice, chilli pepper

1. Cook the rice.  Make the marinade by combining equal parts of soy sauce and ponzu sauce.  Add in sesame oil, seaweed, sesame seeds, and a few slices of the chilli.

2. Cut the salmon into small pieces and marinate for 5 minutes.

3. Dice the avocado.  I also chopped up cilantro for extra flavor and for garnishing.

4. Add the salmon and avocado the rice bowl.  Top with cilantro and chilli pepper slices.
