Hipster Pancakes

a.k.a. Marionberry Pancakes

Recipe adapted from Bobby Flay/Portlandia

Pancake Ingredients: 1 1/2 cups flour, 1/4 cup cornmeal, 2 tsp baking powder, 1 tsp salt, 3 separated eggs, 1 1/4 cup milk, 1/2 cup ricotta cheese, 1/4 cup + 1 tbsp sugar, scant 1/2 tsp lemon zest

Compote Ingredients: 3 cups of marionberries (blackberries), 1/2 tsp lemon zest, 1/4 cup sugar

1.  Mix the dry ingredients for the pancakes.  Then in a large bowl, whisk together egg yolks, milk, ricotta, 1/4 cup sugar, and lemon zest.  Add the flour mixture and stir until well mixed.

2. Beat the egg whites in a separate bowl until there are soft peaks.  Beat in the 1 tbsp of sugar and fold the egg whites into the batter.

3. To make the compote, combine all ingredients in a saucepan with 1/2 cup of water.  Bring to a boil, then reduce to a simmer and stir and crush the mixture until it thickens – about 10 minutes.

4.  Heat up and butter the griddle or pan.  Pour a 1/3 cup of batter into the center to form the pancakes.  Cook until golden brown on each side.

5.  Serve with compote on top of pancakes, with extra berries (and leftover Korean fried chicken).

Dinner for Two

An easy Sunday night meal consisting of elegant comfort foods.  Everything is cooked in the oven, so this is a set it and forget it meal.

Buffalo Chicken Drumsticks

Chicken Ingredients: 6 chicken drumsticks, olive oil, salt and pepper to taste, flour

Sauce Ingredients: 1/4 cup unsalted butter, 1/2 cup hot sauce, splash of white vinegar, garlic powder, cayenne pepper, salt and pepper (all to taste).

1. Pre-heat oven to 425 degrees.  Rinse the drumsticks and pat dry.  If the drumsticks are on the larger side, cut slits into them to ensure full cooking.

2. Lightly coat the chicken with oil and season with salt and pepper.

3. Set the drumsticks on a greased baking sheet and lightly dust with flour.  Bake for one hour.

4.  In the meantime, prepare the buffalo sauce.  Mix all ingredients in a sauce pan over low heat until all combined.

5.  When the drumsticks are done, toss to coat in a bowl of the sauce.

Potatoes Au Gratin

Ingredients: 3 medium potatoes – peeled and thinly sliced (use a mandolin), 2 minced garlic cloves, 2 cups half and half, 1 cup grated Parmesan, salt and pepper to taste, 1 tbsp herb seasoning

1. Pre-heat the oven to 425 degrees.  Mix together the garlic, half and half, salt and pepper, herb seasoning, and a 1/2 cup of Parmesan.

2.  Stack the potato slices around a baking pan into even levels.

3. Pour the mixture over the potatoes.  Sprinkle the remaining 1/2 cup of cheese on top and bake for 45 minutes.

Sunday Dinner

Pasta dishes are a great start (or end) to long work weeks.  This is simple meal that is quick and easy to make on Sunday nights for dinner and convenient as leftovers for Mondays.  It also provides a great solution for the random bits of food left in the refrigerator at the end of the week as you can throw everything together in one dish.

I’m using broccolini, sun-dried tomatoes, chicken, garlic, butter, pesto, shell pasta, and a bit of grated fontina cheese.  My go-to composition for no brainer pastas usually consists of either a pesto or tomato-based sauce, a type of poultry, one or two kinds of vegetables, copious amounts of garlic and butter, and cheese for finishing.

And there you have it – a filling, but healthy meal that covers all nearly all aspects of the food pyramid in just 20 minutes.
