Vietnamese Meatballs

Not sure about the level of authenticity of these meatballs, but something about the hoisin sauce and fish sauce combination is just undeniably delectable. 

1. Finely chop/grate the garlic, ginger, cilantro, and chillies.  Thoroughly the ground beef, garlic, ginger, cilantro, chilies, honey, and fish sauce (it helps to use a blender or your hands).

2. Form the meat into golf ball sized shapes.  Heat a pan with oil and cook the meatballs for 5 minutes each side, covered with the lid. 

3.  Meanwhile, cook the noodles according to the package instructions.  Prepare the dipping sauce by mixing together the hoisin sauce, fish sauce, chillies, water, and soy sauce.

4.  Serve the meatballs over noodles with fresh cilantro garnish.
