Blueberry Ginger Iced Tea

Fruit-blend iced teas are fantastic for the hot humid summer days in New York City.  The sweet flavors of the in-season blueberries complement the spicy sparkling ginger beer in the black/green tea mix.

Freeze the ice cubes with blueberries to further enhance their flavor!  It also makes for such a beautiful presentation.

Recipe adapted from Family Fresh Cooking

Ingredients: Frozen blueberries, honey, 1 can of ginger beer, 1 teabag each of black and green tea.

1. Make the ice cubes by placing frozen blueberries in ice trays and filling them with water.  Set in the freezer until frozen completely.

2. Brew the tea by boiling 2 cups of water and steeping the tea bags for 5 minutes.  Discard the tea bags and chill the tea in the refrigerator.

3. Make the blueberry juice.  Bring a 1/2 cup of water, 1/2 tbsp honey, and 1 cup of blueberries to a boil.  Mash the blueberries so that as much as possible comes out.  Using a sieve, filter the blueberries from the juice and discard.  Set the juice in the refrigerator to chill.

4.  Combine the ginger beer, blueberry juice, and tea.  Add in the ice cubes and serve.

I loved sipping this drink while watching the sun set slowly behind the rooftops on a quiet afternoon.
