This recipe uses a similar base as banana bread, but substitutes for chopped apples instead. The use of fruits in baked goods reminds me of the summer and fall seasons.
Try to use Honeycrisp apples as they tend to be one of the best varieties for baking. I used Braeburn apples this time as they were the best option available at my local Trader Joe’s.

Ingredients: 1 1/2 medium sized baking apples, 1 1/2 cups all-purpose flour, 3/4 teaspoon baking soda, 1 tsp salt, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/2 cup sugar, 3/4 cup vegetable oil, 2 eggs, 1/2 tsp vanilla extract
1. Pre-heat oven to 350 degrees. Peel and chop apples.
2. Mix the dry ingredients together. Then mix the wet ingredients and slowly stir into the dry mixture.
3. Add in the chopped apples and fold to combine.
4. Pour batter into a lightly greased loaf pan and bake for one hour.
