A fancy variation of the baked potato, these are sliced and tossed with grated parmesan and rosemary. The sliced potato fans out slightly more after baking, while the cheesy goodness and aroma of the parmesan and rosemary fill the spaces in between.
1. Pre-heat the oven to 425 degrees. Scrub and prepare a baking potato by slicing at 1/4″ wide intervals along the length. Make sure to leave about a 1/4″ to 1/2″ base that has not been cut – you do not want to slice through the entire potato.
2. Chop up rosemary and grate some Parmesan cheese. Toss the potato with a drizzle of olive oil, salt, pepper, parmesan, and rosemary.
3. Bake the potato for 45-60 minutes. Slice the potato to serve.
This is a great menu item for a dinner party. These potatoes are elegant in presentation, easy and cheap to make, and guests can cut as many pieces as they wish to eat.
