Potato Chickpea Curry

Curry dishes are another great easy weekday dinner meal to prepare.  While the total cooking time yields 30-40 minutes, this is a flavorful recipe with just a handful of ingredients.

1. Prepare your vegetables.  I used stewed tomatoes, chickpeas, potatoes, and ginger.  Heat up some butter and saute the dry ingredients.  Afterwards, add in the remaining ingredients along with some vegetable stock, cumin powder, coriander powder, and chilies.

2.  Simmer on medium-low heat for 30 -45 minutes.

3.  Serve with carb of choice and maybe even some yogurt!
