One cold and lonely night two weeks ago, T ventured out to make a simple and most comforting soup. This vegan friendly recipe uses minimal ingredients and really hits the spot on winter nights.
There are only three simple steps in this vegetable barley soup.
1. Chop up your vegetables of choice, along with some garlic. T chose mushrooms and carrots.
2. Add them in a pot along with herbs for seasoning, and saute until tender.
3. Add in vegetable stock. Once it boils, reduce to a simmer and pour in pearl barley. When the barley has finished cooking, it is ready to serve.
A little parsley garnish and wood table never hurt to make a soup photogenic.
Mmmm…this will just warm your heart, soul, and stomach.
